In Delgany, Co. Wicklow there is a place that can only be described as a ‘Bread Meca’ as bread is not just made here, but lovingly and patiently hand-crafted each day. From crusty sourdoughs to slow proved yeasted breads to mouth watering pastries, the ‘crafts-people’ of this bakery are not just passionate about bread, but philosophical about bread! For as Patrick Ryan, owner of this establishment puts it:

This wonderful place is called The Firehouse Bakery.

This is actually something quite innovative for a bakery and shows that there are no secrets to the beautiful breads they make – just hard work by people that care about what they do. For lunchtime customers their wood fired oven serves up delicious pizzas and flat breads which are served alongside rustic soups and sandwiches.

Have you ever heard the expression “Give a man a fish and you feed him for a day. Teach a man to fish and you feed him for a lifetime?” Well, a by product of the FireHouse Bakery and something that is so beautifully conceived is The Firehouse Bread School, located on the stunning Heir Island in West Cork. It offers 1-day courses on ‘all things bread,’ where attendees learn tips and tricks to confidently producing their own cob loaves, pizzas, flat breads, foccacias, cinnamon swirls and a whole lot more.
